Menu Plan Monday

I would be shocked if I ever completed one menu plan in a week.  I'm looking at the menu below thinking I totally backtracked around this plan!

This was last week's plan:

Monday: Crockpot Chicken Enchiladas, refried beans
Tuesday: Salad, fixins and chicken salad
Wednesday: Bacon, eggs, biscuits
Thursday: Suasage noodle skillet, broccoli cornbread
Friday: Leftovers
Saturday: BBQ Chicken



Sunday we had a vegetable salad with chicken salad and Monday I made my Crock Pot Lasagna. Tuesday was my Love Chicken and Wednesday I tried Broccoli Egg Muffins. This recipe was good but I didn't grease the muffin tins enough and so it stuck. Ended up getting mad enough at the pan that I threw it away! That's one way to get a decent muffin pan! Thursday was leftovers and Friday was a sausage noodle skillet my daughter makes with cornbread. Saturday night we had pizzas out of flatout wraps with salad. So there are the boring details of our week in meals!

Here is this week's plan:

Monday: cubed steak, corn on the cob
Tuesday: chicken pot pie, roasted potatoes
Wednesday: 8-layer casserole
Thursday: beans and wienies, french fries
Friday: out of town (taking my son back to college ~sigh~)
Saturday: BBQ chicken

Anyone try any new recipes or have a family favorite I should try?

  1. I made stromboli for dinner tonight! I used Pillsbury whole wheat artisan pizza dough. Stretched it out and cut it in half- in half I layered tomato sauce, salami, ham, and mozzarella cheese and in the other half sauce, cooked sliced portabello mushrooms, and mozz cheese. Then wrapped it up tight, cut a few slits in the top to let the steam out, and brushed the top with olive oil, garlic salt, and parm cheese. Baked for about 18 minutes at 400 degrees. Served slices with a green side salad. Definitely a hit, and would be easy to make however your family likes. :)

  2. I have a great recipe for meatballs. I take a package of frozen meatballs, barbecue sauce (I prefer the sweet one) and some grape jelly. It all goes into a crock pot until meatballs are warm. The tangy/sweet flavor of the jelly and barbecue give the meatballs an amazing flavor. Everyone loves them!
