Strawberry Bread




With some of our 50 pounds of freshly picked strawberries we (well, actually my youngest son) made our favorite strawberry bread. This bread is delicious warmed with cream cheese or just eaten alone.



Ingredients
3 cups all purpose flour
1 tsp. baking soda
1 tsp. salt
1 tbsp. cinnamon
2 cups sugar
4 eggs, beaten
1 1/2 cup vegetable oil
2 cups thawed, sliced strawberries and juice (can be fresh or frozen)
1 1/4 cup chopped pecans (if desired. I leave nuts out)

  • Grease and flour two 5x9 loaf pans. 
  • Combine dry ingredients.
  • Stir in rest of ingredients until mixture is moist.
  • Spoon batter into loaf pans.
  • Bake at 350 degrees for 60 to 70 minutes or until done.
Notes: 
Make sure to grease and flour the pans well. I prefer using glass over metal. 
Do not over mix ingredients.
Recipe can be used to make muffins. I use muffin tins (greased and floured also) without paper cups. Depending on the oven, cook time will range from 20-25 minutes. Just keep checking to keep from over cooking.
If you're really a sugar freak (like me) you could sprinkle sugar over the top before baking for an added extra bonus!

  8. With strawberries in season this strawberry bread is just what I have been looking for to use up the supply. Have you tried freezing the loaves. Being just two of us, I like always putting one loaf away in the freezer for surprise company.

  10. i confess to having a problem- i buy giant cartons of strawberries for me and my husband, and end up either having to stuff myself full of them before they rot or toss them out. Now i have an excuse to buy those giant cartons!
