Oreo Volcano Brownie

I found this recipe at kevin {&} amanda and wanted to try it for myself. It was one of those nights that I needed to drown my day's sorrows in chocolate. Pinterest was my go to for recipes, but my son Joshua and I couldn't find anything easy and fast enough! (Since then I created a Pinterest board called All Things Chocolate. I'm just thinking of all you lovely readers :-)

Here's our take on this recipe:

Oreo Volcano Brownie

Ingredients
1 box family size brownie mix (I used generic)
eggs and oil (amount needed as on box instructions)
1/2 cup packed ice cream (I had cookie dough ice cream on hand so that's what we used)
1/4 cup hot fudge topping as desired

Directions

Preheat oven and  spray an 8×8 baking dish generously with cooking spray.

Combine brownie mix, eggs, and oil as directed on the back of the box, but do not add the water.

Add ice cream and hot fudge to the brownie batter and stir to combine.

Pour half of the brownie batter into the baking dish, layer with crushed Oreos, then top with remaining batter.

Bake for 40-50 minutes or as directed on the back of the box.

Serve warm with ice cream. Divine!

Handy Helps:
  • My son and I were very skeptical about the ice cream in the recipe, but everything was great. Pack it hard and use whatever flavor you have on hand.
  • We also poured hot fudge over everything once it was all in the dish.
  • My son did not want to leave the oreos whole but that would be my preference. I would have liked that added crunch and icing taste!
  • You could use caramel sauce instead of the hot fudge.
  • You could always double the recipe and use a 9x13 baking dish.
