Menu Plan Monday



Last week's plan (and I say plan very lightly :-)

Monday: Crockpot Chicken Enchiladas, refried beans
Tuesday: Salad, fixins and chicken salad
Wednesday: Bacon, eggs, biscuits
Thursday: Suasage noodle skillet, broccoli cornbread
Friday: Leftovers
Saturday: BBQ Chicken

I surely bailed on this plan! Made it all the way through Monday. Actually, no I didn't. I had cooked a turkey and had all the family together Sunday night so Monday night we had turkey leftovers (and fresh tomatoes from the garden) and/or salad. Tuesday I made the crockpot chicken enchiladas (I give it a thumbs up), Wed. M made breakfast for us. Thursday mama had a meltdown. Yeah, it was a bad day. I'll just call it a mental health day and leave it at that. So it was fend for yourself night at our house. Friday Tim and I decided to go out to dinner so the kids had pizza (crust and sauce from Costco which we love). And on Saturday we had grilled chicken with baked potatoes and corn on the cob. Yum!



For me, this menu planning idea is basically the same as I've done for a couple of years. I'm just trying to incorporate some new recipes and frugal ideas on feeding my family. I know myself, and I'll probably always switch something around based on my day or circumstances or spur of the moment entertaining.

Here's the "plan" for this week!

Monday: Crockpot Lasagna (my own personal recipe)
Tuesday: Stir Fry with chicken and veggies, rice
Wednesday: Omelette in a Bag (another of my recipes)
Thursday: Sausage and macaroni skillet (I'll post this later), broccoli cornbread
Friday: Leftovers!
Saturday Something on the grill with baked broccoli

    It looks like it's going to be in the low 100's but humid in Las Vegas today.
